Medicinal wine 20 g
Vinegar a pinch
Spices a pinch
Chinese herbal ingredients a pinch
Cilantro (cut into segments) 20 g

Instructions

1

Preparing the main ingredient

Wash the chicken wings (preferably middle wings), then make a cross-cut (ideally three cuts, and on the other side use the tip of the knife to score along the bone with two cuts).

2

Marinating

Add 2 g salt and 2 g tenderizing powder to the main ingredient and marinate for half an hour. Then add 3 g MSG, 2 g chicken essence, 15 g ginger juice, 10 g cooking wine, and 5 g spicy (or fragrant) seasoning, and gently mix everything together.

3

Cooking method

Place the base oil in the pot, then add the base sauce, arrange the marinated main ingredient on top, and evenly sprinkle the medicinal wine, Chinese herbal ingredients, and spices. Braise at 270 degrees for 4 minutes, then reduce to 130 degrees and braise for 3 minutes, release the juices, then braise for another 3 minutes, and finish by sprinkling green onion and cilantro before serving.
