Ingredients

shallots 2
garlic 2 cloves
peanut oil 2 tbsp
fresh ginger (grated) 1 tbsp
lean ground beef 250 g
garam masala 2 tsp
frozen peas (thawed) 2 handful
fresh cilantro (chopped) 2 tbsp
spring roll wrappers 16

Instructions

1

Cook the filling

Peel and finely chop the shallots and garlic. Heat the oil in a heavy-bottomed pan, add the shallots, garlic, and ginger, and sauté for 5 minutes. Add the ground beef and garam masala, season with salt and pepper, stir with a wooden spoon, and simmer over low heat for 10 minutes (add water if necessary). Add the peas and cilantro and cook for another 2 minutes. Taste, adjust the seasoning, then let cool.

2

Wrap

Cut the spring roll wrappers in half. Fold each half into a 5 cm wide strip. Place some filling at one end, fold into a triangle, and keep folding over and over until sealed.

3

Fry

Fry in batches until golden brown on both sides. Drain on paper towels.
