Soak shiitake mushrooms, wood ear mushrooms, and cordyceps flowers until fully rehydrated; chop choy sum, cilantro, ginger, and other required ingredients.

Heat the pan over high heat, stir-fry ginger slices until fragrant, then add shiitake mushrooms and stir-fry for a short while.

Add an appropriate amount of water and seasonings (excluding sesame oil and soy sauce), then simmer the shiitake mushrooms over low heat for approximately 40 minutes.

Add wood ear mushrooms and cook for 15 minutes.

Then add cordyceps flowers and cook for about 10 minutes.

While the cordyceps flowers are cooking, blanch the choy sum in boiling water until fully cooked.

Add sesame oil and soy sauce, then stir to mix all ingredients evenly.

Add the blanched choy sum, toss lightly to combine, then turn off the heat.

After plating, sprinkle with cilantro pieces and it is done.
