Braised Choy Sum with Assorted Mushrooms

Story

This cozy, home-style Chinese vegetable dish lets the fresh, earthy natural flavors of tender choy sum and mixed savory mushrooms take center stage, so it's best to go light on salt to avoid overpowering the ingredients' own subtle umami.

Soak shiitake mushrooms, wood ear mushrooms, and cordyceps flowers until fully rehydrated; chop choy sum, cilantro, ginger, and other required ingredients.

Step 2

Heat the pan over high heat, stir-fry ginger slices until fragrant, then add shiitake mushrooms and stir-fry for a short while.

Then add cordyceps flowers and cook for about 10 minutes.
