Braised Crab over Crispy Noodles

Combine the crab meat with egg yolk and braise into a rich sauce, then pour over crispy sanzi (fried shredded noodles) to serve.

Braised Crab over Crispy Noodles

Ingredients

crab meat 225 g
chicken broth 300 g
crispy fried noodles (sanzi) 2 handful
MSG 2 g
egg yolk 1
white pepper 1.5 g
rehydrated shiitake mushrooms 25 g
fine salt 2.5 g
winter bamboo shoots 25 g
cornstarch 15 g
lard (about 100 g used) 500 g
chopped scallions 15 g
julienned ginger 10 g
sugar 10 g

Instructions

Step 1

Beat the egg yolk and mix it together with the crab meat; cut the shiitake mushrooms and winter bamboo shoots into thin strips.

Heat lard in a pot, add the crispy noodles and fry until crisp, then remove, break them apart, and place them in a serving bowl.

Leave about 25 g of oil in the pot over high heat, sauté with the ginger strips, then add the shiitake mushrooms and winter bamboo shoot strips and stir-fry briefly. Add the egg yolk and crab meat, pour in the chicken broth, and add the fine salt and sugar; bring to a boil. Move the pot to low heat and simmer for 2 minutes until the crab meat is flavored through. Return to high heat, add MSG, thicken with a wet cornstarch slurry, sprinkle with white pepper and chopped scallions, and serve immediately over the crispy noodles in the bowl.
