Braised Pig Trotters with Soybeans

Ingredients

pig trotters (washed and chopped into pieces) 200 g
soaked soybeans 100 g
celery (washed, leaves removed, cut into sections) 10 g
ginger (washed and sliced) 1
MSG 1 tsp
cooking oil 15 g
cooking wine 2 tsp
ground white pepper 1 tsp
fine salt 2 tsp

Instructions

1

Preparation

Wash the pig trotters thoroughly and chop them into pieces. Wash the ginger and slice it. Wash the celery, remove the leaves, and cut it into sections.

2

Blanching

Bring water to a rolling boil in a pot. Add the pig trotter pieces and cooking wine, and blanch over high heat to draw out the blood from the trotters. Skim if needed, then remove the trotters and set aside.

3

Stewing

Heat the cooking oil in a pot. Once the oil is hot, add the ginger slices and pig trotters and stir-fry briefly to release the aroma. Transfer everything into a clay pot, add water and the soaked soybeans, then simmer on low heat for about 30 minutes until the broth turns milky white.

4

Seasoning

Stir in the fine salt, MSG, and celery. Sprinkle with the ground white pepper and serve hot.
