Braised Pork with Potatoes

Ingredients

pork belly (washed and cut into cubes) 500 g
potato (washed and cubed) 250 g
scallion (washed and cut into segments) 2
ginger (washed and smashed) 1
peanut oil (heated to about 70% hot, for frying the potatoes) to taste
soy sauce to taste
cooking wine to taste
sugar to taste

Instructions

1

Preparation

Wash the pork and cut it into cubes; wash the potatoes and cut them into chunks; wash the scallions and cut into segments; wash the ginger and smash it.

2

Fry the Potatoes

Add peanut oil to a wok and heat until roughly 70% hot. Add the potatoes and fry until golden brown, then remove and drain off the excess oil.

3

Stir-Fry the Pork

Leave a little oil in the wok. Add the scallion segments and ginger, and stir-fry until fragrant. Add the pork cubes; once the pork releases its oil, add the soy sauce and cooking wine, and keep stirring so the pieces take on an even color.

4

Braise

Add a small amount of water and bring to a boil over high heat. Reduce to low heat and simmer until the pork is nearly tender. Add the potato chunks and sugar, and continue cooking for 10 more minutes. Once the potatoes have absorbed the flavor, transfer to a serving bowl and serve.
