Ingredients

Clean quail (washed, cut into 3cm long, 1.5cm wide pieces) 200g
Lettuce (sliced) 15g
Soaked bamboo shoots (sliced) 10g
Rehydrated shiitake mushrooms (sliced) 5g
Wet starch (for coating quail pieces evenly and thickening the sauce) 75g
Sichuan peppercorn water 5g
Chicken broth 25ml
Minced ginger 5g
Sesame oil (drizzle in at the end) 10g
Minced scallion 10g
MSG 1g
Shaoxing wine 5g
Aromatic vinegar 1g
Soy sauce 15g
Soybean oil (for frying) 750g (actual consumption 60g)
Sesame seeds (roasted, sprinkle evenly at the end) 15g

Prepare ingredients

Wash the cleaned quail, cut into 3cm long, 1.5cm wide pieces; slice the bamboo shoots, lettuce, and rehydrated shiitake mushrooms. Coat the quail pieces evenly with wet starch, set aside.

Prepare the seasoned starch sauce

Mix soy sauce, Shaoxing wine, Sichuan peppercorn water, aromatic vinegar, MSG, chicken broth, and wet starch to make the seasoned starch sauce.

Fry the quail pieces

Heat the wok, add the soybean oil, and heat to medium-high. Add the quail pieces one by one, fry until golden brown, then remove and drain excess oil.

Stir-fry to finish

Leave 30g of base oil in the wok, heat it, add the minced scallion and ginger, and stir-fry until fragrant. Add the bamboo shoots, shiitake mushrooms, and lettuce, stir-fry a few times. Add the fried quail pieces, pour in the prepared seasoned starch sauce, drizzle with sesame oil, sprinkle the roasted sesame seeds evenly, and serve.
