Take 1 sea bass weighing about 1 kg (2 jin), clean and cut into segments. Prepare 6月香葱伴侣 doubanjiang (broad bean paste) and 6月香葱伴侣 sweet bean sauce.

Heat peanut oil in a pan, add the sea bass segments, and pan-fry over medium-low heat until the skin turns golden. When braising fish in sauce, be sure to pan-fry it first to remove any fishy odor and enhance the flavor.

In a separate pan, add a small amount of peanut oil. Add scallion segments, ginger slices, Sichuan peppercorns, and star anise, and stir-fry until fragrant. Add 1 tablespoon of 6月香葱伴侣 sweet bean sauce.

Add 1 tablespoon of 6月香葱伴侣 doubanjiang. A 1:1 ratio works perfectly and the flavor is just right.

Use a spatula to thoroughly stir-fry until the sauce is fragrant, then pour in an appropriate amount of boiling water.

Add the pan-fried sea bass segments to the pot. Bring to a boil over high heat, then reduce to low heat and simmer slowly.
