Instructions

1

Stir-fry base ingredients

Heat a wok over high heat, add lard and heat until melted and hot. Add garlic and stir-fry until fragrant, then remove and discard. Add fatty pork slices, scallion sections, and ginger slices and stir-fry until aromatic.

2

Braise

Add the pre-slaughtered and cleaned soft-shelled turtle and stir-fry until evenly coated. Pour in cooking wine, soy sauce, salt, white sugar, rehydrated shiitake mushrooms, winter bamboo shoots, and broth. Bring the mixture to a boil, then reduce the heat to low and simmer until the turtle is fully cooked.

Reduce sauce and plate

Finally, reduce the sauce until it thickens, stir in water starch to further thicken the sauce, drizzle with a small amount of clear oil, transfer to a serving plate and serve.
