Braised Tofu
Fried tofu braised with marinated pork slices and carrots in a glossy, rich red sauce.
Ingredients
Fried tofu (blanch in boiling water, cut each into 4 pieces)
4 pieces
Lean pork (slice and mix with marinade)
120 g
Carrot
A few slices
Scallions
2 stalks
Ginger (for sautéing)
2 slices
Marinade – light soy sauce (for marinating the lean pork)
1 tsp
Marinade – cornstarch (for marinating the lean pork)
1/2 tsp
Marinade – water (for marinating the lean pork)
1 tsp
Seasoning – oyster sauce
1 tbsp
Seasoning – light soy sauce
1 tbsp
Seasoning – salt
1/4 tsp
Seasoning – sugar
1/4 tsp

Slurry – cornstarch (mix with water to make a slurry)

Prepare the tofu and pork
Blanch the fried tofu in boiling water, then cut each piece into 4. Slice the lean pork and mix well with the marinade.

Braising
Heat the wok with 1 tablespoon of oil and sauté the ginger slices until fragrant. Pour in the seasoning and bring to a boil. Add the tofu and pork and braise for 10 minutes. Finally, add the carrots and scallions and braise briefly. Drizzle the slurry over and serve.
