Braised Wild Rabbit Meat

Ingredients

wild rabbit meat (cleaned and cut into chunks) to taste
shiitake mushrooms (soaked in water, torn into small florets, blanched) to taste
wood ear mushrooms (soaked in water, torn into small florets, blanched) to taste
soy sauce to taste
cooking wine to taste
star anise to taste
minced scallion and ginger to taste
fine salt to taste
vegetable oil to taste

Step 1

Clean the wild rabbit meat thoroughly and cut it into chunks. Soak the shiitake mushrooms and wood ear mushrooms in water until rehydrated, tear them into small florets, and blanch briefly in boiling water.

Heat a small amount of vegetable oil in a pot. Once hot, add the rabbit meat and stir-fry until it changes color. Add some soy sauce, a splash of cooking wine, and the star anise. Pour in water, bring to a simmer, and braise over low heat. When the meat is nearly tender, add the shiitake mushrooms, wood ear mushrooms, minced scallion and ginger, and fine salt, and continue to simmer briefly until the flavors meld and the dish is done.
