Prep the melon
Cut the winter melon in half lengthwise and scoop out the seeds. Peel off the green skin, then cut the flesh into roughly 2-inch cubes. Use a sharp knife to make two shallow diagonal cuts on each piece, like a mild scored pattern—this helps the melon soak up the sauce.
Sear the melon
Heat oil in a large skillet or wok over medium-high heat. Add the garlic and ginger, stir for about 30 seconds until fragrant. Carefully add the melon cubes in a single layer and let them cook untouched for 2-3 minutes until the bottoms turn golden brown.
Braise until tender
