Ingredients

raw cashews 300g
granulated sugar 100g
water 100ml
vegetable oil 200ml for frying

Prep the cashews

Rinse the cashews under cool water and spread them on a clean towel to drain completely. Pat dry with another towel.

Fry until golden

Heat oil in a wide pan over medium-low heat. Add cashews and fry, stirring constantly with a wooden spoon. Cook for about 8-10 minutes until they turn a warm golden color. Remove and let cool slightly.

Make the sugar syrup

In a clean pan, combine sugar and water. Heat over low heat, stirring continuously until the sugar dissolves completely.

Coat and crystallize

Once the syrup becomes thick and bubbly, add the warm cashews and remove from heat immediately. Stir vigorously—the sugar will begin to crystallize and coat each nut.

Finish and serve

Continue stirring until the coating is dry and powdery. Spread on a parchment-lined tray to cool completely before serving.
