Grilled Chicken Vegetable Kebabs

Story

These kebabs are packed with lean protein from chicken breast and loaded with fiber from fresh vegetables. The simple lemon-herb marinade keeps things light while adding bright flavor.

Ingredients

Chicken breast 400g, cut into 2cm cubes
Red bell pepper 1 large, chunked
Yellow bell pepper 1 large, chunked
Red onion 1 medium, chunked
Olive oil 2 tablespoons
Lemon juice 3 tablespoons
Garlic 2 cloves, minced
Dried oregano 1 teaspoon
Salt to taste
Black pepper to taste

Instructions

Marinate the chicken

In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken cubes and toss to coat. Cover and refrigerate for at least 15 minutes, or up to 2 hours for deeper flavor.

Prepare the skewers

If using wooden skewers, soak them in water for 30 minutes. Thread marinated chicken, bell pepper chunks, and onion pieces onto skewers, alternating between protein and vegetables.

Grill the kebabs

Preheat grill or grill pan to medium-high heat. Cook kebabs for 12-15 minutes, turning every 3-4 minutes, until chicken is cooked through and vegetables have nice char marks.

Serve

Remove from heat and let rest for 2 minutes. Serve immediately with a fresh salad or tzatziki sauce if desired.
