Ingredients

chicken breast 300g, sliced thin
broccoli florets 1 cup
bell peppers 2 mixed colors, sliced
olive oil 2 tablespoons
garlic 2 cloves, minced
lemon juice 2 tablespoons
salt and pepper to taste
brown rice 1 cup cooked

Prep the ingredients

Slice chicken into thin strips. Cut broccoli into bite-sized florets. Slice bell peppers into strips. Mince the garlic cloves.

Season and cook chicken

Toss chicken with half the olive oil, salt, pepper, and lemon juice. Heat a grill pan over medium-high heat and cook chicken for 4-5 minutes per side until golden and cooked through. Set aside.

Cook the vegetables

In the same pan, add remaining olive oil and sauté garlic for 30 seconds. Add broccoli and bell peppers, cooking for 5-6 minutes until tender-crisp. Season with salt and pepper.

Assemble and serve

Divide cooked brown rice between two bowls. Top with grilled chicken and sautéed vegetables. Drizzle with extra lemon juice if desired.
