Braised Winter Melon with Mushrooms

Ingredients

Winter melon (peeled, seeded, and sliced) 500 g
Ham (sliced) 100 g
Canned mushrooms 1 can
Stock 8 tbsp
Lard (some for steaming, some for the sauce) to taste
Chicken fat (for drizzling) 1 tsp
Cooking wine 2 tsp
White pepper 1 tsp
Fine salt 1 tsp
Sugar 1 tsp
MSG 2 tsp
Cornstarch (mixed with water for a slurry) to taste

Instructions

1

Prep Ingredients

Peel the winter melon, remove the seeds and inner pulp, and cut into slices. Slice the ham. Blanch the winter melon slices in boiling water until tender, then drain and rinse under cold water.

2

Steam

Arrange the ham and winter melon slices in a bowl. Add the salt, MSG, a portion of the lard, and the stock. Place over a pot of boiling water and steam until fully cooked through. Remove from the heat and invert the winter melon onto a serving plate.

3

Make the Sauce

Heat the remaining lard in a wok until hot. Pour in the cooking wine, then add the stock, mushrooms, and the reserved cooking liquid from the winter melon. Stir in the sugar, salt, MSG, and white pepper. Bring to a boil, swirl in the cornstarch slurry to thicken, drizzle with the chicken fat, and spoon the sauce over the steamed winter melon. Serve immediately.
