Prep the fish
Rinse the yellow croaker under cold water and clean out the cavity. Pat completely dry with paper towels - this is key for achieving a crispy pan-fry. Season lightly with salt inside and out.
Pan-fry until golden
Heat oil in a wide pan over medium-high heat until shimmering. Carefully lay the fish in the pan and cook without moving for about 3 minutes until the bottom turns deep golden. Flip gently and cook another 3 minutes on the second side. Remove and set aside.
Build the braising liquid
In the same pan, add a splash more oil if needed. Toss in the ginger slices and celery strips, stir-frying for about 30 seconds until fragrant. Pour in the cooking wine, soy sauce, and sugar. Let it bubble for a moment.
Braise the fish
Nestle the fried fish back into the pan. Add the water and bring to a gentle simmer. Cover and cook for 10-12 minutes, carefully flipping the fish halfway through. The sauce should reduce slightly and coat the fish beautifully.
Serve
