Braised Yellow Croaker with Celery

Story

Yellow croaker is a beloved fish along China's eastern coast, prized for its delicate flesh and sweet flavor. This home-style dish transforms simple ingredients into something truly satisfying.

Ingredients

whole yellow croaker fish 2 fish (about 400g)
celery stalks 3, sliced into thin strips
fresh ginger 3 thin slices
cooking wine (Shaoxing) 2 tablespoons
light soy sauce 2 tablespoons
vegetable oil 3 tablespoons
granulated sugar 1 teaspoon
salt to taste
water 1 cup (240ml)

Instructions

1

Prep the fish

Rinse the yellow croaker under cold water and clean out the cavity. Pat completely dry with paper towels - this is key for achieving a crispy pan-fry. Season lightly with salt inside and out.

2

Pan-fry until golden

Heat oil in a wide pan over medium-high heat until shimmering. Carefully lay the fish in the pan and cook without moving for about 3 minutes until the bottom turns deep golden. Flip gently and cook another 3 minutes on the second side. Remove and set aside.

3

Build the braising liquid

In the same pan, add a splash more oil if needed. Toss in the ginger slices and celery strips, stir-frying for about 30 seconds until fragrant. Pour in the cooking wine, soy sauce, and sugar. Let it bubble for a moment.

4

Braise the fish

Nestle the fried fish back into the pan. Add the water and bring to a gentle simmer. Cover and cook for 10-12 minutes, carefully flipping the fish halfway through. The sauce should reduce slightly and coat the fish beautifully.

5

Serve

Transfer the fish to a serving plate, spoon the celery and sauce over the top. Serve immediately with steamed rice to soak up the flavorful braising liquid.
