Stir-Fried Pork with Lettuce and Mushrooms

Story

This dish highlights the natural sweetness of lettuce (often celtuce or romaine stems in Chinese cooking) paired with the rich aroma of pork belly. It comes together in a flash, making it perfect for a weeknight dinner.

Ingredients

Pork belly 150g
Lettuce stems (or celtuce) 1 large stalk
Fresh mushrooms 3 pieces
Cooking oil 1 tbsp
Soy sauce 1 tbsp
Cooking wine 1 tsp
Chopped green onions for garnish

Instructions

1

Prep the ingredients

Slice the pork belly into thin strips. Cut the lettuce stems into bite-sized pieces. Slice the mushrooms and chop the green onions.

2

Render the pork

Heat oil in a wok over medium heat. Add the pork belly strips and stir-fry until they release their fat and turn slightly golden.

3

Add vegetables and aromatics

Toss in the lettuce stems and mushrooms. Stir-fry for a minute or two until the vegetables just begin to soften.

4

Season and serve

Pour in the cooking wine and soy sauce. Stir constantly to coat everything evenly and allow the sauce to bubble. Garnish with chopped green onions before serving hot.
