Chicken breast (cut in half horizontally, scored on both sides and sliced)

Breadcrumbs

Cooking wine

Scallion (sliced)

Marinate the chicken cutlet
Cut the chicken breasts in half horizontally, score both sides and slice. Marinate with salt, cooking wine, and sliced scallion and ginger for about 30 minutes. Coat each piece with beaten egg, dry starch, and breadcrumbs, pressing firmly so the coating adheres well.

Frying
Heat oil in a pan until it reaches about 80% hot (roughly 180°C / 350°F). Add the prepared chicken cutlets and fry until golden brown. Remove and arrange on a serving plate.
