Breaded Fish Steak in Tomato Sauce

Ingredients

Clean grass carp (slaughtered and washed) 1 (1000 g)
Breadcrumbs 150 g
Salt (2 g used for marinating) 8 g
Sugar 15 g
Tomato sauce (ketchup) 25 g
Cooking wine 3 g
Ginger and scallion (sliced ginger, scallion knots) 2 g
White pepper 2 g
Eggs (beaten) 3
Cornstarch slurry 10 g
Vegetable oil (200 g actually consumed, plus 5 g in a separate pan) 1000 g
Clear broth 30 g
White vinegar 6 g

Preparing the Fish

Clean and wash the fish, then lay it flat on a cutting board. Using the flat-slicing method, cut off two fillets, remove the pin bones, trim the surface smooth, and use the tip of the knife to make several even cuts down to the skin. Combine the ginger slices, scallion knots, cooking wine, white pepper, and 2 g of salt into a marinade and pour it over the fish fillets. Marinate for 10 minutes.

Breading

Beat the eggs. Dip the two marinated fish fillets in the egg wash, then coat thoroughly with breadcrumbs and press firmly to adhere.

Frying

Heat oil in a pan to medium-hot (5-6 out of 10 heat). Fry the fish fillets until golden yellow, then remove. Cut into rectangular pieces and arrange on a plate. In a separate pan, add 5 g of oil, stir-fry the tomato sauce until cooked through, add salt, clear broth, sugar, and white vinegar, bring to a boil, thicken with cornstarch slurry, drizzle with hot oil, and pour over the fried fish steak to finish.
