Broad Bean Fried Rice

Ingredients

Broad beans (washed and drained)
Carrots (washed and diced)
Cooked rice (steamed; overnight rice works better)
Scallions (chopped)
Cooking oil
Salt

Instructions

1

Prepare the Ingredients

Wash and drain the broad beans, wash and dice the carrots, and chop the scallions.

2

Stir-Fry the Broad Beans

Heat the oil in a wok. Add the broad beans and stir-fry for 3 minutes. Broad beans take longer to cook, so continue stir-frying them until tender.

3

Add the Carrots

Once the broad beans have changed color, add the diced carrots and stir-fry for 2 minutes.

4

Add the Rice

Add the steamed rice and stir-fry until everything is well combined. Overnight rice works better.

5

Season and Serve

Season with salt just before removing from the heat, then sprinkle with the chopped scallions and serve.
