Prepare the berries
Drain the bayberries that have been soaking in wine. Give them a gentle rinse if desired, then pat completely dry with paper towels.
Start cooking
Add the bayberries to a wide, heavy-bottomed pan. Pour in the water and scatter the rock sugar over the top. Place over medium-high heat and bring to a gentle boil.
Simmer and reduce
Once boiling, reduce heat to low. Let the mixture simmer gently, stirring occasionally to prevent sticking. The sugar will dissolve and create a glossy syrup that coats the berries.
Finish and dry
Continue cooking until the liquid has almost completely evaporated and the berries are glazed in a thick syrup. Remove from heat and spread on a parchment-lined tray. Let cool completely until the outside becomes slightly tacky and dry.
