Catfish with Savory Strawberry Sauce

Ingredients

catfish fillets (6 ounces each) 4
salt 1⁄4 teaspoon
pepper 1⁄4 teaspoon
hot pepper sauce 1 teaspoon
strawberry spreadable fruit 1⁄4 cup
red wine vinegar 2 tablespoons
seafood sauce 1 tablespoon
soy sauce 3⁄4 teaspoon
grated horseradish 1⁄2 teaspoon
garlic clove (minced) 1
cornmeal 1⁄3 cup
all-purpose flour 1⁄3 cup
olive oil 1 tablespoon

Instructions

1

Prepare the Fish and Sauce

Place the fish fillets in a shallow dish. Sprinkle with the salt, pepper, and hot pepper sauce; set aside. In a small saucepan, combine the strawberry spreadable fruit, vinegar, seafood sauce, soy sauce, horseradish, and garlic. Heat until hot through.

2

Coat with Cornmeal Mixture

Meanwhile, in a large resealable plastic bag, combine the cornmeal and flour. Add the catfish fillets one at a time, shaking to coat.

3

Pan-Fry the Catfish

In a large nonstick skillet, heat the olive oil over medium-high heat and cook the catfish for 2-3 minutes per side, until the fish flakes easily when tested with a fork. Drain on paper towels. Serve with the strawberry sauce.
