Ingredients

thick pizza crust (see page 22) 1/3 portion
mozzarella cheese (shredded) 175 g
canned Italian tomatoes (drained and crushed into small pieces with a wooden spoon) 450 g
garlic (finely chopped) 2 cloves
Parmesan cheese (finely grated) 45 g
dried basil 2.5 g
olive oil 15–30 ml
salt a pinch
black pepper (freshly ground) a pinch

Instructions

1

Prepare the dough

Prepare the pizza dough according to the instructions on page 15.

2

Preheat the oven

Preheat the oven to 240°C.

3

Shape the crust

lightly dust the dough with flour, then use a rolling pin to roll it into a crust about 3 mm thick and 27 cm in diameter. Brush a 23 cm-diameter, 5 cm-deep cake pan with oil. Press the dough into the pan so that its edges are level with the rim.

4

Add the toppings

Spread a layer of mozzarella cheese over the crust. Follow with a layer of tomatoes, then scatter over the garlic and seasonings. Finally, add the grated Parmesan cheese and drizzle the olive oil over the pizza in a clockwise motion.

5

Bake

Bake for 35–40 minutes, until the filling is thoroughly cooked and the crust is puffed, crisp, and golden brown.
