Ingredients

uncooked medium shrimp (peeled and deveined) 3/4 pound
chicken tenderloin (cut into 1-inch cubes) 3/4 pound
green onions (chopped) 4
garlic cloves (minced) 2
butter 1 tablespoon
fresh parsley (minced) 1 tablespoon
white wine or chicken broth 1/2 cup
lemon juice 1 tablespoon
lime juice 1 tablespoon
chopped onion 1/4 cup
butter 1 tablespoon
reduced-sodium chicken broth 2/3 cup
reduced-fat chunky peanut butter 1/4 cup
brown sugar 2-1/4 teaspoons
lemon juice 3/4 teaspoon
lime juice 3/4 teaspoon
salt 1/4 teaspoon
dried basil, thyme and rosemary (crushed) 1/4 teaspoon each
cayenne pepper 1/8 teaspoon

Instructions

1

Thread the Skewers

Thread shrimp and chicken onto 12 metal or soaked wooden skewers. Place in a large shallow dish; set aside.

2

Make the Marinade

In a small skillet, sauté green onions and garlic in butter. Stir in parsley, wine or broth, lemon juice, and lime juice. Remove from heat; let cool slightly. Pour over skewers and turn to coat. Cover and refrigerate for 4 hours, turning every 30 minutes.

3

Make the Sauce

In a small saucepan, sauté onion in butter. Add remaining sauce ingredients; cook and stir until well blended. Remove from heat; set aside.

4

Grill the Skewers

Before starting the grill, coat the grill rack with nonstick cooking spray; prepare for indirect heat. Drain and discard marinade. Grill skewers, covered, over indirect medium heat for 7-8 minutes, turning frequently. Brush with 1/4 cup sauce during the last minute. Serve with remaining sauce.
