Chicken Dice with Lotus Seeds

Ingredients

chicken breast (cut into diagonal dice) 250 g
oil 50 g
eggs (use the egg whites) 2
white lotus seeds (blanch in hot water) to taste
carrot (diced) to taste
green beans (cut into small segments) to taste
sugar to taste
cooking wine to taste
salt to taste
MSG to taste
scallion and ginger (sliced) to taste each
starch (used for coating and thickening the sauce) a pinch

Prepare the Ingredients

Blanch the lotus seeds in hot water. Cut the chicken breast into diagonal dice. Slice the scallion and ginger. Place the chicken dice in a bowl, add salt, cooking wine, MSG, egg whites, and starch; stir well to coat evenly.

Mix the Sauce

Place the sliced scallion and ginger in another bowl, add cooking wine, salt, MSG, and a slurry of starch and water; mix into a sauce and set aside.

Stir-fry

Heat the wok over high heat, add the oil and the chicken dice, and stir-fry. When the chicken is about 80% cooked, add the carrot dice, green bean segments, and lotus seeds; stir-fry evenly until the chicken is fully cooked. Quickly pour the sauce from the bowl into the wok and stir-fry so the sauce evenly coats all the ingredients.
