Chicken Soup Wontons

Chicken Soup Wontons

Ingredients

prepared wonton wrappers to taste
lean pork 500 g
salt (for filling) 15 g
ginger (crushed and soaked in 100 g water to make ginger water) 15 g
soy sauce 25 g
sesame oil 10 g
white pepper (for filling) 1 g
MSG (for filling) 3 g
egg 1
cold water (for filling) 550 g
salt (for soup seasoning) to taste
cooking wine (for soup seasoning) to taste
MSG (for soup seasoning) to taste
white pepper (for soup seasoning) to taste
chicken broth (soup base) to taste

Step 1

First prepare the wonton filling: finely mince the pork into a paste and place it in a bowl. Add salt, soy sauce, sesame oil, white pepper, MSG, and ginger water (made by crushing the ginger and soaking it in 100 g of water). Slowly add the cold water while stirring vigorously in one direction, then pour in the chicken broth and mix well. Continue stirring until evenly combined; each time the water is absorbed, add more water, until all the water has been added and the filling is well blended.

Step 2

Wrap the filling in the wonton wrappers. Bring the chicken broth to a boil in a soup pot, add the seasonings to taste, then add the wrapped wontons and cook until done. Ladle into bowls and serve.
