Chinese Yam Black Sesame Paste

Ingredients

Chinese yam (cut into small pieces) 15 g
Black sesame (toasted) 120 g
Rose sugar 6 g
Fresh milk 200 g
Rock sugar 120 g
Japonica rice (soaked 1 hour) 60 g

Step 1

Wash the japonica rice, soak in clear water for 1 hour, then drain; cut the Chinese yam into small pieces; toast the black sesame until fragrant. Place these three ingredients in a bowl, add water and fresh milk and mix well, then grind and strain out the fine pulp for later use.

Add rock sugar and clear water to a pot, melt and strain the syrup, then bring to a boil. Slowly pour the ground pulp of the japonica rice, Chinese yam, and black sesame into the pot, add the rose sugar, and stir continuously until it thickens. Once cooked through, remove from the heat and serve.
