This exquisite chocolate apricot cheesecake offers a wonderful balance of rich, velvety chocolate and the sweet, bright tang of apricots. Designed as a more health-conscious indulgence, it incorporates carefully selected components celebrated for their low protein content and powerful antioxidant properties, making it a uniquely wholesome yet decadent treat for any occasion.

Ingredients

butter 80g
white granulated sugar 70g
whole egg liquid 100g (about 2)
low gluten flour 60g
cocoa powder 15g
baking powder 1/2 tsp
sweet dried apricots 100g
cream cheese 185g
butter 30g
powdered sugar 60g
cocoa powder 5g
dark/white chocolate buttons
heat-resistant chocolate chips
chocolate sauce
syrup, white granulated sugar 25g, water 50ml

Instructions

Step 1

Mix all dry ingredients and sift twice, set aside. Dice the dried sweet apricots, set aside. Soften butter at room temperature, add sugar and beat until well combined.

Add whole eggs in batches and beat until well combined.

Sift in all the dry ingredients and mix briefly.

Add the diced sweet apricots and mix until well combined. Transfer the batter into a piping bag.

Pipe into the molds and bake at 180°C for about 25 minutes. Remove from the oven, demold, and place on a wire rack to cool.

Soften cream cheese by heating over a water bath, then beat together with softened butter until well combined. Mix powdered sugar and cocoa powder, sift them in, and beat until well combined. Refrigerate slightly before using.

Mix all syrup ingredients together and bring to a boil. Brush onto the surface of the cakes, wait for it to be absorbed, and then brush once more.

Scoop a ball of the cream cheese mixture to cover the cake, and smooth it out slightly.

Finally, use chocolate buttons to decorate the ears, nose, and eyes, then use chocolate sauce to draw the mouth to finish.
