Chocolate Cupcakes with Chocolate Frosting & Honeycomb

Ingredients

milk 175 ml
dark chocolate (70% cocoa) 100 g
caster sugar (part used to melt chocolate) 125 g
unsalted butter 60 g
vanilla extract 1 tsp
egg 1
self-raising flour/cake flour 150 g
icing sugar (for frosting) 125 g
cocoa powder (for frosting) 2 tbsp
caster sugar (for honeycomb) 200 g
golden syrup (for honeycomb) 4 tbsp
baking soda (for honeycomb) 1 tbsp
dark chocolate (for frosting) 100 g
unsalted butter (for frosting) 100 g

Instructions

Preheat oven

Preheat oven to 180˚C (350˚F, gas mark 4)

Melt chocolate

Make the cake: Chop the dark chocolate and add to the milk and one-third of the sugar. Place the bowl over a pan of simmering water. Make sure the bottom of the bowl does not touch the water. Stir gently for 5-10 minutes until the chocolate pieces melt. Set aside to cool.

Cream butter

Cream the butter for 2-3 minutes until smooth and creamy. Add the remaining sugar and vanilla extract, and beat thoroughly for 4-5 minutes until the mixture is pale yellow and fluffy in texture.

Add eggs

Beat in the eggs for 1-2 minutes. The mixture will become thinner, slightly grainy, and yellow in color.

Add flour

Sift the flour into the bowl, folding it into the mixture one spoonful at a time. The mixture will become thicker and lighter in color.

Mix in chocolate

Gradually fold in the cooled chocolate in batches, making sure to mix thoroughly before adding more. The mixture will become slightly thinner but extremely smooth. Continue stirring for 2-3 minutes.
