Ingredients

large egg 1
large egg yolk 1
cold water 1 tablespoon
whole or slivered almonds 2/3 cup (about 1 1/2 ounces/40 grams)
sugar 2/3 cup
all-purpose flour (spoon flour into a dry-measure cup and level off) 1 cup
alkalized (Dutch process) cocoa (sifted after measuring) 2/3 cup
baking powder 1 teaspoon
salt 1/4 teaspoon
cold unsalted butter (cut into 8 pieces) 6 tablespoons (3/4 stick)

Instructions

1

Step 1

Put the almonds and sugar into a food processor fitted with a metal blade. Pulse repeatedly until the almonds are finely ground.

2

Step 2

Use a spatula to scrape down the sides of the processor bowl, then pulse 2 to 3 more times.

3

Step 3

Add the flour, cocoa, baking powder, and salt. Pulse again to combine.

4

Step 4

Add the butter and pulse repeatedly until it is completely incorporated into the dry ingredients, with no visible pieces of butter remaining.

5

Step 5

Add the whole egg, egg yolk, and water. Pulse repeatedly until the dough comes together.

6

Step 6

Invert the food processor bowl onto a floured work surface to release the dough. Carefully remove the blade and transfer the dough to the work surface. Shape it into a disk about 1/2 inch (1 cm) thick. Wrap the dough in plastic wrap and refrigerate.
