Story

This classic street food from Chongqing brings together two beloved comfort foods—wontons and noodles—in one fiery bowl. The key is the red chili oil sauce, which delivers that signature numbing-spicy flavor.

Ingredients

fresh wonton wrappers with filling 200g
wheat noodles (or instant noodle blocks) 200g
baby bok choy or spinach 100g
Chongqing-style chili oil sauce 3-4 tbsp
noodle cooking water 1 cup
crispy pea flakes (or fried onions) 2 tbsp
sesame seeds (optional) 1 tsp

Cook the wontons and noodles

Bring a large pot of water to a rolling boil. Add the wontons and noodles together, stirring gently to prevent sticking. Cook until the noodles are tender and the wontons float to the surface, about 4-5 minutes.

Blanch the greens

About 30 seconds before the noodles are done, drop in the bok choy or spinach. Blanch just until wilted but still bright, then drain everything well.

Make the sauce base

In a large serving bowl, combine the Chongqing chili oil with about 1 cup of the hot noodle cooking water. Stir well to create a loose, aromatic sauce.

Assemble and serve

Add the drained noodles and wontons to the bowl with the sauce. Toss everything together until well coated. Top with the blanched greens, sprinkle with crispy pea flakes and sesame seeds. Serve immediately while hot.
