Step 1
One eggplant.
Step 2
Wash the eggplant and cut it into sections of about 5 cm. Make a few horizontal cuts in each section, as shown in the picture. Do not cut all the way through the bottom. You can place two chopsticks on the left and right sides of the eggplant to prevent cutting through.

Then make a few vertical cuts.

Steam in a pot until fully cooked.

While steaming the eggplant, mix together minced ginger, minced garlic, minced scallions, light soy sauce, aromatic vinegar, salt, chili oil, Sichuan pepper powder, sesame oil, Sichuan pepper oil, chicken bouillon, and white sugar. Stir well.
Step 6
Carefully remove the steamed eggplant and place it on a plate. Adjust it slightly, then scoop a spoonful of shiitake meat sauce [for the shiitake meat sauce recipe, refer to "Homemade Shiitake Meat Sauce"] and place it in the center to act as the flower core. When eating, dip it in the sauce made in step 5.
