Clay Pot Baked Crab

Ingredients

Crab (about 600g, washed and scrubbed clean) 2
Scallion 5
Ginger 5
Fine salt 1.5 tsp
MSG 2 tsp
Stock 0.5 tbsp
Lard 1.5 tbsp
Minced ginger (for dipping) 1

Instructions

Step 1

Wash and scrub the whole crab clean. Make a cut along the center line of the crab's belly (apron), but do not cut all the way through — keep it intact.

2

Step 2

Heat a clay pot over high heat and add oil. Add the ginger slices and scallion segments and stir-fry until fragrant. Add the crab, then add the stock, fine salt, and MSG. Cover and bake over low heat for about 12 minutes, until the liquid has evaporated and the crab is cooked through, then remove.

Step 3

Cut the crab open and remove the crab innards. Arrange on a plate in the shape of a whole crab. Serve with the plate of minced ginger on the side for dipping.
