Clear Broth Bird's Nest

Ingredients

dried bird's nest 25 g
clear broth 1500 g
alkali 2 g
refined salt 5 g
MSG 5 g
Shaoxing wine 10 g

Instructions

1

Step 1

Wash the bird's nest with warm water, then soak it in water that is about seventy percent hot until softened. Gently lift it out, use tweezers to remove the fine hairs and impurities inside the nest, and rinse clean with fresh water.

2

Step 2

Dissolve the alkali in boiling water, add the cleaned bird's nest, give it one gentle stir with chopsticks, soak for 5 minutes, then lift it out. Soak again in boiling water for another 5 minutes. Once the nest has fully expanded, rinse it several times with warm water to wash away all traces of the alkaline liquid, tear it into small pieces, and set aside.

3

Step 3

Place a soup ladle on the stove, add the clear broth, and once it comes to a boil blanch the bird's nest. Drain it well and place it in a soup bowl.

4

Step 4

Pour the clear broth into a clean ladle, add the refined salt, MSG, and Shaoxing wine. Once it boils, skim off the foam, add the MSG, and gently pour the broth around the bird's nest in the bowl. Serve immediately.
