Ingredients

Cooked beef brisket (cut into strips, then into diamond pieces) 200g
Soybean oil 75g
Soy sauce 10g
Vinegar 15g
Sugar 25g
MSG 0.5g
Shaoxing wine 1g
Cornstarch 25g
Sichuan peppercorn water 0.5g
Cilantro 1g
Sesame oil 0.5g
Shredded scallion 0.5g
Shredded ginger 0.5g
Sliced garlic 0.5g

Prep and Marinade

First cut the beef brisket into strips, then into diamond pieces, and toss with cornstarch.

Make the Sauce

In a bowl, combine soy sauce, sugar, vinegar, Sichuan peppercorn water, Shaoxing wine, and MSG to make the sauce.

Deep-Fry

Heat a wok over high heat and add oil. When the oil is about 70% hot, lower the cornstarch-coated brisket pieces one by one into the oil and fry until red-brown. Remove with a slotted spoon and drain off excess oil.

Stir-Fry and Pour Sauce

Leave a little oil in the wok, add scallion, ginger, and garlic to bloom the aroma, then add the fried brisket, pour in the combined sauce (stir first to mix), toss to coat, drizzle with sesame oil, plate, and garnish with cilantro. Serve immediately.
