Clear Soup Chrysanthemum Fish

A traditional soup dish from Zhejiang. Black carp is scored in a crosshatch pattern, briefly blanched, then simmered in superior broth. The scored flesh opens into a chrysanthemum-like shape, and the broth remains clear and delicately flavored.
