Ingredients

dried apricots 125 g
orange juice 10 cl
butter (diced) 40 g
powdered sugar (reserve a little extra) 75 g
shredded coconut (lightly toasted) 90 g
glazed cherries (sliced) 2

Instructions

1

Soaking the dried apricots

Cut the dried apricots into small pieces and place them in a bowl. Pour in the orange juice and soak for about 1 hour, until the liquid is absorbed.

2

Creaming the butter

In another bowl, cream the butter and powdered sugar until light and fluffy.

3

Mixing

Gradually add the dried apricots to the butter mixture, beating well after each addition. Add the toasted coconut.

4

Shaping

Line a small baking tray with parchment paper. Using a teaspoon, place the coconut mixture on the parchment and gently shape with your fingers into pyramid-shaped rocks.

5

Decorating

Place a small piece of glazed cherry on top of each mound, gently pressing it into the dough. Chill in the refrigerator for 1 hour. Dust with a little powdered sugar before serving.
