Instructions

1

Step 1

Prepare the ingredients. Boil the chestnuts in advance and remove the brown outer skin.

2

Step 2

Cut the coconut open, pour out the coconut water, and cut the coconut meat into chunks.

3

Step 3

Cut the half fresh chicken into large pieces.

4

Step 4

Place the cut chicken pieces into a pot of cold water, blanch to remove scum, then remove and set aside.

5

Step 5

Add an appropriate amount of water to the soup pot, then add the coconut meat, chestnuts, chicken pieces, ginger slices and honey dates.

6

Step 6

Bring to a boil over high heat, then skim off the scum and excess oil with a ladle.

7

Step 7

Boil over high heat for 10 minutes, then turn to low heat and simmer for about 40 minutes. Check the surface halfway through simmering; skim out any excess oil with a ladle if present.

8

Step 8

The skimmed chicken fat can be reserved for blanching vegetables or making superior soup to avoid waste.

9

Step 9

After simmering for 40 minutes, turn to high heat, slowly pour in the coconut water, then cook for another 10 minutes before adding salt to taste.
