Coconut Rock Sugar Bird's Nest

Ingredients

Bird's nest (soaked in clean water for 4 hours, fine feathers removed, washed, drained) 50g
Longan pulp (washed, drained) 25g
Fresh coconut milk 1 cup
Fresh milk 0.5 cup
Boiling water 1.5 cup
Rock sugar (crushed) 75g

Step 1

Soak bird's nest in clean water for 4 hours, remove fine feathers, wash, and drain.

Wash longan pulp and drain. Crush the rock sugar.

Place bird's nest and longan pulp into a double boiler, add boiling water, cover and steam for 2.5 hours. Add rock sugar, fresh milk, and fresh coconut milk, cover and simmer for about 15 minutes until sugar dissolves. Serve directly in the pot.
