Cod Fritters

Caribbean-style salted cod fritters, crispy on the outside and tender within, with a mild heat from chili.

Cod Fritters

Ingredients

salted cod (desalted) 400 g
eggs (separated) 2
flour 200 g
baking powder 1/2 tsp
onion (grated) 1
garlic (grated) 2 cloves
leeks (chopped) 2
Antillean chili (finely chopped) 1/2

Instructions

Prepare cod

Add cold water to a pot to cover the cod, heat over low heat until it reaches a gentle boil. Let cool, drain, remove skin and bones, then flake the fish meat.

Make batter

In a large bowl, mix flour and baking powder, make a well in the center, add a cup of water to thin the batter. Add onion, garlic, leeks and egg yolks, mix thoroughly. Whip egg whites to stiff peaks, gently fold into the batter. Add flaked cod and chili. Refrigerate to rest for 30 minutes.

Fry

Heat frying oil. Take a small amount of batter, roll into balls, fry for about 3 minutes. Serve immediately.
