Prepare and cut
Rinse the dried shrimp in water until all sand and silt are removed. Cut the winter melon into pieces measuring 1 1/3 inches long and 1/4 inch thick.
Fry the winter melon
Heat the lard in a wok. Once it is hot, add the winter melon and fry until golden brown. Remove the pieces and drain them thoroughly.
Braise and thicken
Heat the lard in a wok and fry the chopped green onion and finely chopped ginger until fragrant. Add the chicken broth and fried winter melon, followed by the dried shrimp, fine salt, and MSG. Simmer until the flavors are absorbed, then thicken with the starch slurry. Drizzle with clear oil and transfer to a serving plate.
