This coffee-infused twist on classic Italian biscotti boasts a delightfully crisp, twice-baked texture and rich, aromatic coffee flavor, making it a perfect companion for a warm espresso or an afternoon pick-me-up.

Ingredients

low-gluten flour 200 grams
egg 1
crushed cashews a small amount
white sugar 30 grams
salt 4 grams
baking powder 5 grams
coffee powder a small amount

Instructions

Step 1

Place the cashews into a plastic bag. Crush them using a rolling pin.

Mix all the flour ingredients together first. Then beat the eggs and stir them into the flour mixture.

After kneading the mixture into a dough, add the crushed cashews.

Place the dough on a baking tray lined with aluminum foil. Shape it into a flat oblong form.

170°C. Bake for 25 minutes until the surface turns yellow. As the mixture contains coffee powder, it is hard to tell if the surface has turned yellow, so monitor it closely. Take it out and let it cool. Cut into 1cm thick slices, then spread them flat on the baking tray.

140°C. Bake for 15 minutes. Take out the tray, flip the pieces over, then bake for another 15 minutes.
