Cola Braised Chicken Wing Drumettes

Step 1
Soak the chicken drumsticks for a while, then blanch them by putting them into a pot with cold water.
Step 2
While the blanching process is underway, prepare the seasonings.

Remove the blanched chicken drumsticks from the pot.
Step 4
Heat the pan, add cold oil, then directly put in star anise and sliced ginger.
Step 5
After frying until fragrant, add facing heaven chilies.

Then add the chicken drumsticks to the pan and stir-fry, then add dark soy sauce, cooking wine, fermented tofu brine, salt and sugar in sequence. When the stir-frying is nearly done, pour in cola, cover the lid, bring to a rolling boil over high heat then reduce to medium heat and simmer for 20-30 minutes, and it is ready when the sauce is almost fully reduced.

Take a look at my home's seasoning box and spoon. With this spoon, I used 4 and a half spoons of salt for 2 bags (46 pieces) of chicken drumsticks, and the taste is just right. For one bag, 3 spoons is enough! As for sugar, 2 to 3 spoons is sufficient, since cola itself contains sugar.
