Comté Cheese Waffles
Savoury waffles made with Comté cheese, optionally seasoned with a sprinkle of ground nutmeg.

Comté cheese (grated)

nutmeg powder (optional)

Step 1
In a bowl, mound the flour into a well, pour in the beaten egg yolks, and mix with a spatula. Slowly add the melted butter, milk, and salt. Beat the egg whites to stiff peaks and gently fold them into the batter. The batter should be slightly thicker than crêpe batter. Cover with a cloth and let rest for 1 hour.

Heat the waffle iron and lightly grease it with an oiled cloth. Fold the Comté cheese into the batter, adding a pinch of nutmeg powder if desired. Pour into the molds and bake each waffle for about 3 minutes. Keep warm in a hot oven and serve hot.
