Confectioners’ Sugar Icing

Ingredients

confectioners’ sugar 6 cups
milk 6 to 8 tablespoons
fresh lemon juice 2 tablespoons
Food colorings (optional)
Colored and coarse sugars, chocolate and rainbow sprinkles, multicolor nonpareils, Red Hots and other mini-candies, sweetened shredded coconut, raisins (for decorations)

PLACE

Place the powdered sugar in a large bowl. Stir in 6 tablespoons of milk and lemon juice. Add more milk as needed, but note that the icing must be thick enough for piping.

If using food coloring, divide the icing into several small bowls. Add the coloring drop by drop, tinting the icing to the desired color.

SPOON

Spoon the icing into squeeze bottles (see tip on page 48) or a piping bag fitted with a small round tip. Pipe the icing along the edges of the cookies or in any desired pattern. To glaze the cookies or spread the icing within the piped outline, slightly thin the icing with milk, then paint it onto the cookies using a small brush. Before the icing dries, sprinkle with various sugars and candy decorations. (The wet icing acts as glue.) Allow the icing to set completely before storing the cookies.
