Tender yellow soybean sprouts (cleaned and root-trimmed)

Prepare the bean sprouts
Wash the bean sprouts and trim the roots, blanch in boiling water until cooked, drain excess water, and arrange on a plate.

Prepare the seasoning sauce
Heat the sesame oil to medium-low heat, add the Sichuan peppercorns and fry until golden brown, then remove. Add the shredded red chili, shredded scallion and shredded ginger, then add the shredded wood ear mushroom, soy sauce, cooking wine, vinegar, white sugar and fine salt in sequence. Bring to a boil, then pour over the bean sprouts and serve.
