Cordyceps Chicken

A classic staple of traditional Chinese nourishing cuisine, this dish is crafted to leverage the natural health-promoting properties of its core components to support kidney function, lung health, and overall vitality.

Ingredients

Cordyceps (cleaned with warm water) 20 g
young hen (slaughtered, plucked, gutted, claws chopped off and cleaned) 1 piece (approx. 1500 g)
MSG to taste
ginger slices to taste
scallion segments to taste
refined salt to taste
ground black pepper to taste
chicken broth (clear broth) to taste

Process Ingredients

After slaughtering the chicken, remove its feathers and internal organs, cut off and discard the feet, then wash thoroughly. Blanch the chicken in boiling water for a short time to remove blood and impurities, take it out and rinse with clean water. Rinse the cordyceps with warm water.

Stuff the Cordyceps

Split the chicken head open along the neck, insert a few pieces of cordyceps into the chicken head and neck, then tie tightly with cotton thread. Place the remaining cordyceps, along with ginger and scallions, into the chicken cavity.

Steam the Dish

Place the stuffed chicken into a stewing bowl, add clear broth, salt, cooking wine, and ground pepper. Seal the opening of the bowl with cotton paper, then steam in a bamboo steamer until the chicken is tender and fully cooked. After taking it out of the steamer, remove the cotton paper, discard the ginger and scallions, add MSG to adjust the flavor before serving.
