This dish thrives on the interplay of crisp and tender. The crab meat is blanched, swaddled in a light batter, and fried to a shattering crunch, while the tofu strips turn a deep gold in the same oil. A quick toss in a savory glaze of oyster sauce, a splash of cooking wine, and a pinch of pepper brings everything together, finished with a bright scatter of scallion greens.

Ingredients

Tofu 300 g
Crab meat (thawed, blanched, and drained) 100 g
Scallions (diced) 2 stalks
Flour (mixed into batter) appropriate amount
Starch (mixed into batter or for thickening) appropriate amount
Cooking oil (40 g actual consumption) 500 g
Oyster sauce 3 tsp
Cooking wine 2 tsp
Pepper powder a pinch
White sugar 1 tsp

Instructions

Step 1

Cut the tofu into long strips; thaw the crab meat, blanch it in boiling water, then remove and drain; mix the flour, starch, cooking oil, and water together into a batter, coat the crab meat with a layer of the batter, then fry it in hot oil until crispy and remove.

After removing the crab meat, fry the tofu strips in the remaining oil; remove as soon as they turn golden.

Cut the scallions into small cubes, first sauté the scallion whites in an appropriate amount of oil, then add the fried crab meat, stir-fry it together with the tofu strips, cooking wine, oyster sauce, sugar, pepper, and water starch until evenly mixed, and finally sprinkle with the scallion greens.
