Crispy Fried Onion Rings

Ingredients

onion (peeled, ends trimmed, cut into 0.5 cm wide rings) 200 g
flour 35 g
starch 35 g
egg (use the beaten egg) 1
lemon cream sauce 2 tbsp
salt 2/3 tsp
cooking oil (for mixing the batter and frying) 1 cup
baking powder 1/4 tsp
water (for the batter) to taste

Instructions

1

Prep the Onion

Peel the onion, trim off both ends, then cut it into 0.5 cm wide rings.

2

Make the Crispy Batter

Combine the flour and starch in a small bowl. Add the beaten egg, salt, baking powder, and water to taste, whisking into a smooth batter of moderate thickness. Stir in 1 tbsp of the cooking oil and set aside.

3

First Fry to Set the Coating

Place a clean pan over the heat, pour in the cooking oil, and bring it to about 60% hot (roughly 150-160°C / 300-320°F). Dip each onion ring in the batter to coat it evenly, then lower it into the hot oil. Fry until the coating sets and holds its shape, then lift out. Gently pull apart any rings that have stuck together.

4

Second Fry and Plate

Once the oil temperature has risen again, return the onion rings to the pan and fry until golden and crisp. Remove, drain off the oil, arrange on a plate, and serve with the lemon cream sauce.
